Fruit marshmallow

Here’s a fun and easy recipe for fruit marshmallows, which are light, fluffy, and packed with fruity flavor!

Fruit Marshmallows

Ingredients:

  • 1 cup fruit puree (e.g., strawberries, raspberries, mango, or any fruit you like)
  • 2 cups granulated sugar
  • 1 cup water
  • 2 tbsp gelatin powder (or 2 packets)
  • 1/2 cup corn syrup (or honey)
  • 1/4 tsp salt
  • 1 tsp vanilla extract (optional)
  • Powdered sugar (for dusting)

Instructions:

  1. Prepare the Fruit Puree:

    • Blend your chosen fruit until smooth. If desired, strain to remove seeds or pulp. Measure out 1 cup of puree.
  2. Bloom the Gelatin:

    • In a small bowl, sprinkle the gelatin over 1/2 cup of cold water. Let it sit for about 5-10 minutes to bloom.
  3. Cook the Sugar Syrup:

    • In a saucepan, combine the granulated sugar, corn syrup, remaining 1/2 cup of water, and salt. Cook over medium heat, stirring until the sugar dissolves. Increase the heat and bring to a boil. Do not stir once it reaches a boil. Use a candy thermometer to heat until it reaches 240°F (115°C).
  4. Combine Mixtures:

    • Once the sugar syrup reaches the desired temperature, remove it from heat. Add the bloomed gelatin and fruit puree, and stir until the gelatin is fully dissolved. If using, add the vanilla extract.
  5. Whip the Mixture:

    • Pour the mixture into a stand mixer bowl (or use a hand mixer) and beat on high speed for about 10-15 minutes, or until the mixture is thick, fluffy, and has doubled in volume.
  6. Set the Marshmallows:

    • Lightly grease an 8x8 inch baking dish or line it with parchment paper. Pour the marshmallow mixture into the dish and smooth the top with a spatula. Dust the top with powdered sugar.
  7. Let It Set:

    • Allow the marshmallows to set at room temperature for at least 4 hours or overnight until firm.
  8. Cut and Serve:

    • Once set, dust a cutting board with powdered sugar. Turn the marshmallows out onto the board and cut them into squares or desired shapes. Dust the sides with more powdered sugar to prevent sticking.
